Good Mole/Bad Mole

Many "authentic" Mexican restaurants continue to pop up in the U.S. and around the world. If you're accustomed to Tex-Mex, you may be in for a surprise.

True Mexican food often relies on side sauces and accompaniments for flavoring rather than the saltier versions we're familiar with. I am often leery of "authentic" places and recall one experience in which the entire meal tasted like one huge chocolate dish. Molé (mow-lay) is actually a delicate Mexican chocolate flavoring that adds such depth when done correctly.

Cindy,

Many years ago I a chicken dish with this sauce and recall that it was delicious. By any chance do you have a recipe that you could share? I know where I can find Mexican Chocolate and would like to give an authentic recipe a try.

I know this may fall into the "bad" mole category, but I am going to buy some mole sauce when I go to the supermarket :wink:

Give it a try! Although pure Mexican chocolate will make all the difference in the world. Just go very easy on it and add it to only one dish.

I wasn't a huge fan of mole sauce until we finally had it done "right." We were fortunate enough to have Mexican neighbors next to us while we were renting and building a house. She kept bringing us food and then I'd be over in her kitchen learning all the really neat stuff.

A really good mole takes time and is even better made a day ahead. I have a great mole poblano that I'll post over at Our House and Garden this weekend.

Hi, Vannie - here's a great recipe for mole poblano. It just went up. A bit labor intensive, but I think adding pre-made mole will make the job easier.
