Forget the ham - go for tamales!

In Mexico, tamales are the traditional Christmas day food. December 16-24, during La Posadas, everyone participates in a host of festivities. Then, on Christmas Eve at midnight, a huge meal is served - with tamales, of course.

Now, they're also served on Christmas day and are often made in advance because they freeze so well. In fact, the making of tamales is pretty labor intensive and it's much more fun if you invite family and friends in to help.
