Old-Fashioned Banana Pudding

3/4 cup granulated sugar
1/3 cup flour
3 egg yolks (save whites for meringue or egg while omelet)
2 cups very cold milk
1/2 tsp vanilla
5o Vanilla wafers
5 firm ripe bananas, sliced
Pinch of salt

Directions

Blend sugar, flour and salt. Place in double boiler and add egg yolks and milk, stir to blend well. Cook over boiling water and stirring for 10 minutes or so, just until the mixture is thickened and coats the spoon. Remove from heat and add vanilla and stir. Hold 15 vanilla wafers for top of pudding.

Spread small amount of vanilla custard on bottom of medium large glass casserole pan; cover with a layer of vanilla wafers and a layer of sliced bananas. Spread more of the vanilla custard over the bananas and add another layer of bananas. You should be able to get 3 layers from this batch. Finish with thin layer of custard and lay vanilla wafer on top of custard. Cover with saran wrap and press down gently. Allow flavors to come together.

Enjoy any extra vanilla wafers with ice cold milk.
